Makes 2 large pizzas
175ml water (room temp)
1/4 tsp salt
4g dry yeast
1 tbsp olive oil
Add yeast & sugar to water – let sit for 10 minutes.
Mix in olive oil, then flour & salt. Knead until smooth & elastic. Cover & leave to rise until doubled in size. Divide into two balls, roll until thin & place on oiled pizza tray. Cover until ready to top & bake.
For the topping
150g oyster mushrooms, torn into strips if large
2 large red onions, sliced
2 tsp’s balsamic vinegar
200g strong hard cheese, such as romano, sliced thinly
To prepare the caramelised onions, saute onions in olive oil until soft, stir in balsamic vinegar & cook a little longer until onions are sticky.
Spread the onions evenly over the two pizza bases, then spread the oyster mushrooms. Spray or drizzle the top of the pizzas with a little olive oil, then evenly spread the cheese slices.
Cook in a hot oven (200C) until the edges of the pizza start to brown, the mushrooms cooked & the cheese melted.
